Who has not seen the now viral Dubai Bar on social media—it has taken the chocolate world by storm. When I finally got one to try, I was both really impressed by the originality of the bar and disappointed by how super sugary sweet it was.
In that great Charles Chocolates tradition, we set out to make what we think is the ultimate expression of that really cool idea.
Instead of sweet milk chocolate, we use a rich, bittersweet chocolate blend that truly compliments the pistachio and crisp shredded kataifi filling. And while we are talking about the filling, every version of the Dubai Bar that I have tried uses a pre-made, very sweet pistachio cream. Given that we were both trying to reduce the sweetness and also stick to our "we make everything from scratch" ethos, our pistachio cream is made fresh here in our kitchens from premium fresh pistachio nuts.
